The most common fish that we send people home with is redfish. Now not everyone is lucky enough to catch a keeper - some have to be released back in to the Bay. In order for you to keep a redfish in Florida, it has to be between 18" and 27".
There are several ways to cook redfish. It can be grilled, fried, blackened, etc. Today, we're showing you one of our favorite ways to prepare it - blackened. We paired it with garlic roasted green beans and parmesan mashed red potatoes.
Combine spices in a shallow bowl or plate and set aside.
Dip each filet in melted butter, then generously coat with spice mixture by pressing filets in to spices.
Heat oil in a large cast iron pan until very hot, for about 6 minutes.
Cook the filets, in batches if necessary for 2-3 minutes on each side. Be careful when flipping the fish as it can be delicate.
Wallah! Blackened redfish.
